Peanut Choc Protein Balls

 

Protein balls are the perfect nutritious snack when you're on the run. These are packed full of fibre, protein and are a delicious mix of salty and sweet. Perfect mouthful!

Rather than buying nut meal, which is expensive and you don't know how long it's been sitting on a supermarket shelf going rancid, I recommend buying nuts & seeds in whole form and just blitz them in a blender to make your own fresh nut meal. Takes 10 seconds! You can do this in big batches & store in an airtight container in the fridge, so it’s ready to go whenever you need it.

These are minimal effort, maximum flavour!

 INGREDIENTS

  • 1 cup rolled oats

  • 2/3 cup shredded coconut

  • 1/2 cup peanut butter

  • 1/2 cup ground flax and almond meal (I used a mix of both)

  • 1 scoop of vanilla protein powder (optional)

  • 1 tsp vanilla paste

  • 1/4 cup honey

  • 2 tbsp coconut oil, melted

  • 1 tbsp water

  • 1/2 cup mini dark choc chips

 METHOD

  1. Place all ingredients in a bowl and stir until well-combined and then roll into balls

  2. Place in fridge until you're ready to eat

  3. Enjoy!

TOP TIPS

  • If the mix is a little dry, add a dash of coconut oil

  • Freezer friendly: Double the mixture and freeze for another day

  • Toddler-friendly: 12months+
